How to Make a Waffle Ice Cream Sandwich
- Remove ice cream from the freezer to soften a bit.
- Toast waffles as per directions on the box. Make sure they are well-toasted until golden brown; no one wants a soggy waffle. That’s what the ice cream is for.
- Plop a scoop of ice cream onto one waffle and use the other half of the waffle to top your sandwich.

Leftovers and Reheating
- If your eyes are bigger than your stomach and you accidentally make too many waffles, you can store them in an airtight container in the refrigerator for 2-3 days.
- When you’re craving a midnight snack, pop the waffles into the toaster or toaster oven until heated. Then, use an ice cream scoop to plop your favorite ice cream flavor in between your waffles!
Expert Tips
- If you feel like classing up the joint, sprinkle a little powdered sugar on top.
- Use chocolate chip waffles or brownie waffles for a fun twist!
- Slap some peanut butter on the insides of each waffle for a creamy surprise!
Recipe FAQs
Use vegan ice cream for a dairy-free waffle ice cream sandwich!
The possibilities are endless! You can keep it simple with chocolate and vanilla ice cream or jazz it up with fun flavors like Rocky Road or Mint Chocolate Chip! Want to spice things up even more? Try adding fun toppings to your ice cream before slapping it between your waffles! Some great options are hot fudge, rainbow sprinkles, whipped cream, mini chocolate chips, or caramel sauce!
We recommend waiting until the waffles cool slightly before putting ice cream on them so the ice cream doesn’t melt everywhere! But don’t wait too long, or your waffles will get too cold, and no one wants a cold waffle.

these look absolutely amazing! what a great, simple idea, love it!
So fun! Glad to see you used frozen waffles – I was going to say I’d have to do that since we don’t own a waffle maker!! The neat thing here is the varieties can be endless w/ice cream or waffles and sizes depending on what you find or make 🙂
Most awesome thing ever. Ever!!!!!! Pure evil genious! I am soooooo making this! Gah!
I miss my slip ‘n slide! It had so much duct tape on it I am sure my parents threw it away eons ago. But hey at least I can still enjoy these waffle ice cream sandwiches!
I’ve been craving ice cream sandwiches for a while now, but I’ve been resisting the urge because I know the ones from the corner store are sooooo full of artificial junk.
I have a feeling these would totally hit the spot, though, especially since I could make them with proper (ie. non-artificial) ice cream! More taste, less guilt. 🙂
These are so fun and so easy. What a great idea for this hot spell that we’re having as well. Forget the classier powdered sugar. It’ll be whipped cream and fudge for sure!
These are awesome! I was all pouty yesterday because I saw a post where someone made waffle cones and I don’t have a waffle cone maker but now this is totally better! Such a great idea.
LOVE these, Kita. Love. My kids would love them too. What I need to do is get the mini waffles so my kids don’t OD on sugar!!!
Ohhhh, girlfriend. I love you. These look wonderful!
I want to slip n slide!! And I want one of these to die for sandwiches!!
I am so jealous of the heat out there. Not hot here at all. But still eating ice cream. Toaster waffles here are squarish. Belgian waffles may be the right ones for these.
This is such a great idea, thanks for the great inspiration Kita!
I have never heard of something like this! I LOVE this idea!!! We have a bunch of old Eggos in the fridge that nobody ever eats… looks like I am going to claim them. And about the wading pool… my friends bought a 15 ft diameter above ground pool for 200 bucks it is AWESOME! We put chairs in it and a badminton net over it, true class.
Oooh so yummy! I want a purple one!!
You’re so stinkin creative! Love the colors, the idea… wowza!
Such a fun treat. I could totally see trying to sneak one of these in as breakfast food. 😉
