Yesterday, I was having a no good run down sort of day and was knee deep in house chores that seemed like they were never going to end. I took a brief pause from the work and turned on some classic tunes and decided to make myself a little pre-happy hour cocktail to get me through the 4 loads of laundry and window cleaning left on the to-do list.
I didn’t want anything that would sit my booty on the sofa, but instead, wanted something zippy to give me a pick me up and perk the rest of the afternoon up! I whipped up this fresh Toasted Coconut Strawberry Tequila Cocktail and it really hit the spot!
The rest of the chores didn’t look so bad after my little happy place break!
Why Nut Milk?
Since doing the Whole30 challenge, I have pretty much been obsessed with cashew milk and any other nut milk out there. (Want to see more Whole30 approved recipes? Check out what I have been whipping up).
Confession, I didn’t fall in love with from the jar coconut milk in my coffee, but the moment I tried cashew milk, I was all in and have been using it as a classic milk substitute ever since in my morning coffee and over the occasional bowl of oats. (Bonus, I have also been really thrilled with Califia Farms toasted coconut milk – OMG so good).
Then (post, Whole30), I discovered these sweet little bottles of Silk Nutchello in my dairy aisle at the market and I totally was intrigued!
I have been crushing hard on new flavors on varieties and couldn’t have picked a better time to get into nut milk! They are popping up everywhere as a healthy alternative to traditional dairy milk. I grabbed myself a bottle of the toasted coconut and cashew milk knowing it would be my coffee’s new BFF in the morning.
(Won’t lie, I was totally tempted to grab the Rich Dark Chocolate and Walnut too – the kid in me just wanted a giant class of that!).
I always taste a little bit of my new discoveries when I get home. My first sip of the toasted coconut and cashew and I knew I’d made the right choice and was excited to start using it.
(That’s how you know you are an adult right there, excited to use new milk in your coffee. It’s the small things.)
A creamy Cocktail that isn’t Heavy
In a cocktail, this doesn’t sit heavy like I find milk does. Mudslides and such just aren’t for me. But with cashew milk, um. Delish. With a bit of strawberry tequila cream (yeah, you read that right. and it’s amazing), and rumchata (also amazing) this is a fun social sipper for the +21 crowd.

- 4 oz Toasted Coconut Cashew Nutchello
- 2 oz strawberry tequila cream
- 1 oz rumchata
- Fresh strawberries for garnish
- Combine the ingredients in a cocktail shaker and shake until a few foamy bubble appear.
- Strain into a class with ice and add a fresh cut strawberry for bonus points, if desired.
