Don’t knock it til you try it. That’s a phrase I grew up hearing when something new was put on the plate in front of me. I have tried to live like that since I started cooking. The more I cooked, more ingredients I worked with, the more I tried, the more food I found pretty darned tasty. So, when I checked out the recipes for this month’s round of Pass the Cook Book Club, from  Seoultown Kitchen by Debbie Lee, that’s the spirit I embraced. Sam (the darling hostess over at Little Ferraro Kitchen), picked three recipes – and sure, I could have gone with with wings or the beef (which really sounded good) – but – the whole reason I started this thing was to embrace new recipes. Try new things. So…. I went with that third recipe she picked. Spam and Eggs.

Now, when I think of Spam and Eggs, I think of giant, friendly, awesome Hawaiian dudes. (Blame Hollywood. Disney . And Adam Sandler. But don’t ruin my make believe version of Hawaii. I will never afford a trip there so at least let me have my dreams). I also think of Spam… Spam. I don’t even know what Spam is. But, I grew up eating tuna, and hot dogs, and scrapple. So I can do this. I can get over my adult nose in the air food from a can snobbishness and try something new. And that’s how that can of Spam got in the cart and on it’s way home to recipe test. And you know what, it wasn’t that bad.

Spam and Eggs for Pass the Cook Book Club with Debbie Lee

Ingredients

  • 2 tbs vegetable oil
  • 8 eggs
  • Salt and pepper
  • 1 can Spam - sliced into 1/4? pieces
  • 4 cup cooked white rice - hot
  • 2 tbs roasted and salted sesame seeds - for garnish
  • 1/2 cup maple syrup
  • 2 tbs chili powder
  • 1/2 teas cinnamon
  • 1 teas smoked paprika

Instructions

  • Combine the maple syrup, chili powder, cinnamon, and paprika in a small sauce pan. Bring to a low simmer and let cook for 10 minutes.
  • Meanwhile, get some skillets going on the stove top. In one large skillet over medium low heat, coat the pan with oil. Crack the eggs into the pan and cook sunny side up (I scrambled mine – but that’s my preference).
  • In another skillet, heat the spam sliced 2 to 3 minutes a side over medium high heat until they are browning and crispy.
  • Serve with rice, eggs and spam on each plate. Drizzle the chili maple sauce on top and pretend you are

  1. Hahha YESSS you tried the SPAM!!! Not bad, eh? Its such a classic breakfast at home lol Oh and PS…I suck again and didn’t make the recipe in time…but I am SOOO glad others did!!

  2. Given my own diet/nutrition choices, I judge no one for eating Spam. Raisins, on the other hand, are a different story.

  3. Whoo hoo!! Kudos to you for trying the Spam! I’ve had it before when I was younger and remember it not being bad at all but I just wasn’t feelin’ it this time around. Love that you stepped out of your comfort zone and went for it. Also really love the addition of avocados to your dish. I bet they paired wonderfully here. Yum!

  4. I like your attitude. I wish I could convince my kids not to knock foods until they tried them; like mushrooms. We enjoyed this dish, too.

  5. I just couldn’t do the Spam. I will say though yours looks way better than I ever could have imagined it being.

  6. Haha omg, you did it. I am not a spam person, but hey man…gotta try it at least once
