This week’s dinners have been crazy and all over the place. I am back on my bike and training has been kicking my booty. To top it off, I am challenging myself to a Whole 30 month – because – let’s be honest, traveling is hard on the waste line. (Follow along with my thoughts and meals on GirlCarnivore’s Instagram)! A huge goal for myself this year as I near the big 3-0 is the Shenandoah 100, a mountain bike race through the beautiful Shenandoah mountains. These mountains hold a huge spot in my heart and I cherish them, to take them on on my bike is going to be hard for me. The race isn’t until Labor Day, but it’s long over due that I put the miles in to ready myself for it. So, between the lack of sugar in my coffee and riding with the posse that will always challenge me to ride a little harder, I had visions of beating people with bananas in the market the other night. I am hoping that I was able to suppress all of that with a little old fashioned bacon love and have moved on to the stage where I embrace the Whole 30 and get down to business!
