Part one of a Thanksgiving Recipe Roundup – Home-Style Mashed Potatoes and Green Beans. In which, I skip the fancy recipe I had planned for family favorites and classic Thanksgiving Sides I know will go a long way.
Let me give you a rundown of some things going on. See that cram packed table up there? That is proof that I’m a wee bit off the deep edge with no shot of coming back.
That is my all from scratch ‘Thanksgiving’ dinner a week before Thanksgiving just because I wanted to ‘blog about some food’. That is crazy.
Next week, my family will gather around one of those feasts made to feed a small country, leave with doggie bags to feed us for a week longer and be so full and content with company that we will already want to start that post-holiday workout. But here I am, kicking things off a whole week early.
Why? Because smoked turkey is the most amazing thing you can give yourself this holiday season. Because I wanted to review a cookbook, and because I really just like to cook.

Friends and family got to gawk awkwardly as I climbed atop chairs and snapped photos before allowing them to dig into the spread (better planning on the crazy train noted for the future. I don’t like it when people see me in full-on blogger mode).
Now that you know what kind of Hell I inflicted upon my loved ones – let’s get on to the recipes!

Home-Style Mashed Potatoes
Ingredients
- 5 lbs Yukon gold potatoes
- 3/4 cup heavy cream
- 4 tbsp unsalted butter
- salt and pepper
Instructions
- Scrub and peel the potatoes. Dice into even 1/2″ cubes to even out cooking time.
- Place in a large Dutch oven with just enough water to cover.
- Salt the water and bring to a boil. Cook, covered, for 15-20 minutes, or until a fork pierces the potatoes easily.
- Drain the potatoes and return to the Dutch oven.
- Add the cream and using a blender or a masher, mash the potatoes.
- Add 2 tablespoons butter and mix until incorporated.
- Add more cream, if needed (starch may vary from potato to potato).
- Season with salt and pepper to taste and top with remaining 2 tablespoons of butter to entice friends and family into extra big spoonfuls.

Roasted Green Beans with Beets
Ingredients
- 2 lbs green beans - rinsed and trimmed
- 1 lbs beets - peeled and sliced
- 2 shallots - sliced
- 1/4 cup olive oil
- salt and pepper
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 425 degrees F.
- Arrange green beans evenly in a single layer on a large baking sheet.
- Place beets and shallots on the sheet and toss, keeping as flat a layer as possible.
- Drizzle olive oil over the top and sprinkle with salt and pepper.
- Roast for 45-50 minutes, stirring once or twice mid way through. Add the walnuts in the last 10 minutes.
