Eat a Chocolate Chip Pudding Cookie and Do Nothing Monday

Im going to start a revolution. It’s going to be amazing and you’re going to want a piece of it. I have a vision of thousands, no hundreds of thousands marching with me for my goal. It will blow your mind. It will change the world.

Do Nothing Monday.

That’s right. Do Nothing Monday. See, the weekend is great, but you end up burning whatever free time you don’t have to be in the office doing family events, catching up with friends, grocery shopping, shopping in general, cleaning, laundry… ugh…

That’s why I started the Do Nothing Monday. It’s my day. Mine. Yeah, I’m selfish. But on Monday, Handsome is back to work and it’s my day to wake up fresh and rejuvenated knowing I get to knock the things the list that I want to get to knocking.

I usually spend the day working on websites, cooking and dancing about the kitchen to my own speed.

Chocolate Chip Pudding Cookies

Inspired by My Simply Sweet Life, from Lula

Ingredients:

  • 1 cup butter, room temperature
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 package instant vanilla pudding
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup sour cream or plain yogurt
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups chocolate chips

Preparation:

Preheat oven to 375 degrees F.
Beat butter and sugars together in a standing mixer until fluffy. Add pudding, egg, and vanilla. Add flour, baking soda, and salt. Stir in white chocolate chips.
Spoon onto parchment paper lined baking sheets.
Bake at 375 f for 7-10 minutes.
Let cool on a wire baking rack.

    Cool idea of using pudding in the cookie recipe. And I’d love to join your revolution of Do Nothing Monday. Unfortunately I’m at work and already broke the rule — maybe next week?

    I have Mondays off (but I work very hard over the weekend!) and eating cookies and doing nothing sounds like the perfect way to spend it… now, if only I could get my very active toddler to cooperate!

    These are best with chocolate pudding, ghittard milk chocolate chips and scooped with the pampered chef cookie scoop. Yum!

    I’ve always been a sucker for a good chocolate chip cookie and your’s look fabby. I also like the idea of Do Nothing Mondays… if I could only swing that!
    In fact, I’ll put that right up on the shelf with my other new discovery: Stay off the computer Sundays! (Haven’t quite managed that one either….!)

    I love this ‘do nothing monday’ idea!! it’s so true… you do so much catching up during the weekend that by the end you realize that you didn’t get to relax… I’m with you, Kita…sign me up!! And bring a batch of that yumminess up there with you! K? Thanks. :))

    I’m ready to join the cause! Do Nothing Monday! DNM! LOL I’ve never heard of cookies with pudding in it, I’m imagining them like way better Soft Batch cookies by the look of your pictures. Can’t wait to try this.
