Ingredients
For the Waffles

melted and cooled

For the Apple Cider Topping
1
tart granny smith apple
cored and sliced thin

butter

tbs
honey
Instructions
Make the Waffles
Preheat your oven to 200 degrees F. Line a baking sheet with a wire rack; Set aside. Preheat your waffle iron.
Toss the flour, salt, baking powder, soda, cinnamon, nutmeg, and ginger together in a large bowl.
Whisk the eggs and maple syrup together in a small bowl.
Whisk the buttermilk and apple cider in another small bowl.
Make a well in the center of the flour mixture and pour in the egg mixture, butter, and buttermilk mixture. Stir until just combined.
Fold in the pecans. (batter may have a few lumps, totally ok).
Cook until golden and crisp as per your waffle irons instructions. Keep warm on wire rack in the preheated oven if needed.
Meanwhile, make the apple topping.
Melt the remaining 1 tbs butter in a pan over medium heat. Add the sliced apples and cook until soft, about 5 minutes.
Drizzle in honey and cook 2 minutes longer. Remove from heat.
Serve the waffles with apple slices spooned over top and additional toasted pecans if desired.
