These Baked French Toast Sticks are quick and easy to grab and go in the wee hours of the morning. Best part? They can be made ahead in big batches, and frozen.
Slice the bread into 1" strips and arrange on a wire rack for 1 to 2 hours. (I let my bread get stale before soaking it).
When ready to cook, preheat the oven to 375 degrees F.
Prep a baking sheet for cooking by lining with parchment paper.
Combine the heavy cream, eggs, 2 tsp cinnamon, vanilla, and salt into a shallow dish.
Toss the 1 tsp sugar and additional 1 teas cinnamon in a small bowl for sprinkling later; Set aside.
Dip each bread stick into the batter and roll around to coat all sides. Let excess wash drip off and arrange on the baking sheet to fill the pan, leaving a 1" boarder between each stick.
Bake for 15 to 18 minutes, until golden brown, flipping once halfway through bake time.
Sprinkle immediately with cinnamon sugar when removing from the oven. Flip and sprinkle the other side. Let cool.
Repeat as needed to finish up the loaf of bread.
Serve with a small cup of syrup for dipping.
To Freeze and Use Later
Place in freezer in a single layer to freeze for 30 minutes before tossing into a large resealable freezer-bag to freeze in batches as needed for busy weekdays.
To Reheat preheat the oven to 350 and heat the French Toast Sticks in the oven or in a toaster oven. They will taste so much better, and have a much more enjoyable texture than trying to microwave them.
