Ingredients

green beans
rinsed and trimmed
1
lbs
beets
peeled and sliced
2
shallots
sliced
¼
cup
olive oil
salt and pepper
½
cup
chopped walnuts
Instructions
Preheat the oven to 425 degrees F.
Arrange green beans evenly in a single layer on a large baking sheet.
Place beets and shallots on the sheet and toss, keeping as flat a layer as possible.
Drizzle olive oil over the top and sprinkle with salt and pepper.
Roast for 45-50 minutes, stirring once or twice mid way through. Add the walnuts in the last 10 minutes.
