Combine the maple syrup, chili powder, cinnamon, and paprika in a small sauce pan. Bring to a low simmer and let cook for 10 minutes.
Meanwhile, get some skillets going on the stove top. In one large skillet over medium low heat, coat the pan with oil. Crack the eggs into the pan and cook sunny side up (I scrambled mine – but that’s my preference).
In another skillet, heat the spam sliced 2 to 3 minutes a side over medium high heat until they are browning and crispy.
