{Notes from my past self to my future self - some weekends are awesome}

Yesterday was one of those rare days where Handsome and I had off and weren't obligated to some crazy list of events that sped out weekend into a blur that we wouldn't remember three days from now. No, it started with sleeping in.

It was followed by a serious dose of mountain biking with a friend of mine.

Some hipster activities that involved leggings, Converse's, over priced coffee shops, and loitering at one of our local bike shops.

We then tried to get all outdoorsy by trying on North Face clothing at the local outdoorsy shop. Proceeded by a long conversation at the pet store.

Lastly, we did what most American's do on any given Sunday and wound up at a sports bar with friends, giant TV's and jerseys galore. I know nothing of this football you speak of.

There was a bonfire this weekend with teammates, margaritas, a fond farewell to a great friend moving to a new chapter in his life, some comic shop display rearranging, and the complete and utter lack of good planning as I got really excited for Thor Thursday night with friends just to be reminded that I was going to be traveling to the beautiful Culinary Institute of America's Hyde Park Campus this last week... who needs Thor tickets?

(It's ok, don't panic. I've seen Thor, it was awesome. Anyone else nerding out in anticipation for Cap Winter Soldier? This girl is!)

Dulce de Leche Fluff Brownies

Ingredients

  • 6 oz unsweetened chocolate - chopped
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoon vanilla
  • 1 ⅓ cup flour
  • ½ teaspoon baking soda
  • 1 cup mini semi-sweet chocolate chips
  • 7 oz marshmallow cream
  • 13 oz dulce de leche

Instructions

  • Preheat the oven to 350 degrees F. Line a 9 x 13" baking pan with foil and grease; set aside.
  • In a small saucepan over low heat, melt the butter and chocolate until smooth, stirring as needed. Set aside to cool for a few minutes.
  • In a large bowl, stir the cooled chocolate butter mix and sugar until dissolved. 
  • Add the eggs, one at a time until mixed. 
  • Add the vanilla and stir to combine. 
  • Add the flour and baking soda and stir until completely combined.
  • Add the chocolate chips and stir until just combined. 
  • Pour into the prepared pan and bake for 20 to 25 minutes, until just set in the center and edges are starting to pull from pan.
  • Spoon the marshmallow fluff onto the top. Let sit for a 2 to 3 minutes then spread evenly over the top. 
  • Dollop the dulce de leche on top and swirl with a knife. Cool before slicing and serving.

    Oh my gosh, girl....how am I supposed to focus on your weekend (which did sound fun) when there's marshmallow and caramel oozing off the top of a brownie up there? It looks amazing.
