You know those commercials  this time of year jamming jewelry down your throat? Then there's the reminder that it really is 'engagement season' by the random texts and phone calls I have gotten lately from excited friends who are sharing their good news. But you know what sends me over the top? Facebook rubbing my nose in it. Facebook loves to remind you someone has had a change in their 'relationship status' for far too long. I saw it, I congratulated, now go away. But no, every time I log in for the next week, Facebook is going to point and laugh it's little reminder of all the wonderfully engaged happy couples in my face... Wish there was a way to hide the happy news stream.

Don't get my wrong. I am happy for my friends and acquaintances on Facebook. I wish them all the best. It's that in the right hand corner of my news feed is dominated with engagement and wedding announcements for days on end. I get that it's a huge moment for the people involved, but for me, well maybe I'm just getting bitter. ;P

Today should be a Diggin' It Tuesday, and it should have been yesterday so I figured while I had this rant stoking I would fire away and resume with regularly scheduled Diggin posts next week. I'm sure the anticipation will kill you.

Andes Mint Brownies

Ingredients:

  • ½ cup butter
  • 3 oz unsweetened chocolate, chopped
  • 1 cup sugar
  • 2 eggs
  • 1 teas vanilla
  • ⅔ cup flour
  • ¼ teas baking soda
  • ¾ cup Andes Mint Chips, or candies crushed

Preparation:

Preheat the oven to 350 degrees F. Line an 8x8" square baking pan with aluminum foil or parchment paper (enough to hang over the edges) and grease.

Melt the butter in a medium saucepan over low heat. Whisk in the chopped chocolate. Let cool for 5 minutes.

Whisk the sugar, eggs, and vanilla into the butter mixture. Stir in the flour and baking soda until just combined and no white streaks remain. Fold in the mint chips.

Pour batter into prepared pan. Sprinkle with additional mint chips if desired.  Bake for 28-30 minutes.

Cool on a wire rack before serving. But seriously, who doesn't love a warm brownie?

    I feel like you need a hug and I wish I could give you one. I guess this is one instance where my age makes a big difference. The only relationship statuses that Facebook shows me are the separations and divorces, which make my heart hurt too, but for different reasons. That being said, I was 40 when Hubby popped the question and for two decades before that I wondered when/if my turn would come. But, I'm so, so glad I waited because if I hadn't, I wouldn't have Hubby and we most definitely wouldn't have Dudette. And that's a horror I can't even begin to contemplate. (I'd comment on the brownies, but you know me and chocolate...gag.)

  13. you say to whisk in the cocoa powder but in the ingredients cocoa powder is not listed? how much cocoa powder and where does the chopped cocoa pieces fit in? They are not mentioned! I'm confused...

    1. Thanks for the catch! You should put the chopped chocolate in with the melted butter. Sorry about that!
