Onion cheddar pork burgers are likely to become one of your favorite burger creations!

Handsome and I have recently gotten ourselves knee deep into a new hobby. One I would have never imagined myself doing alone - Mountain biking.

Every weekend and on weeknights where one of us doesn't have school or work, we load up the truck with out two new Cannondale bikes, our silly sport apparel, and helmets and head out. We have discovered several great trails at some local Maryland and Delaware state parks that each offer something different and enjoyable for our rides. The guys at Wooden Wheels bike shop in Newark have been great to us as well, helping us pick out new bikes that work for us and recommending new websites and trails for us to try as well.

The best part about this whole shindig is that I would never have decided to pick up a bike and trek out into muddy paths with exposed rocks and roots all by myself - let alone break a sweat. Don't get me wrong, I have no problem getting muddy, I just wouldn't have chosen a 'push myself' sport if left to my own devices. With Handsome pedaling ahead, my naturally competitive nature kicks things up a notch and I am more willing to push myself. It's been interesting learning how to maneuver a bike through tight trails. Not exactly as easy as the expression about riding a bike would make it seem. I have been struggling a little this week since I still have a sinus thing going on, but I am looking forward to where this new found love of mountain biking takes us.

When we get home and are starving after a long day at work and a few miles on the trails, we grill up onion cheddar pork burgers!

Onion Cheddar Pork Burgers

Ingredients:

  • Onion Cheddar Pork Burgers \\ passthesushi.com2 tbs Worcestershire sauce
  • ¼ teas salt
  • ¼ teas ground black pepper
  • 2 lbs ground pork
  • 2 cups shredded cheddar (8 ounces)
  • 1 large onion, cut into 3 pieces
  • 1 clove garlic, minced
  • 1 tbs olive oil
  • 1  ½ teas chili powder
  • ¼ cup ketchup
  • 1 tbs packed dark brown sugar
  • 1 tbs cider vinegar
  • 1 tbs reduced-sodium soy sauce
  • 1 tbs coarse-grain mustard
  • Hamburger buns, split and toasted

Preparation:

In a large bowl, combine the Worcestershire, salt, and pepper. Add the ground pork; mix well. Shape pork mixture into twelve 4-inch diameter patties. Sprinkle with ⅓ cup or of the cheese on 6 patties; top each with a remaining patty. Pinch edges of top and bottom patties together, sealing well. Cover and chill for at last one hour.
For caramelized-onion sauce, in a large skillet, cook onion and garlic in hot olive oil over medium heat about 10 minutes or until onion is golden, stirring occasionally.* Add chili powder, cook and stir for 1 minute. Stir in ketchup, brown sugar, vinegar, soy sauce, and mustard. Bring to a boil; reduce heat. Simmer, uncovered for 2 minutes. Cool to room temperature.
For a charcoal grill, grill patties on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until done, turning once halfway through grilling.
For a gas grill, preheat grill. Reduce heat to medium. Place patties on a grill rack over heat, cover and grill as above.
Serve burgers in toasted buns topped with caramelized-onion sauce.
Caramelized-onion sauce can be made ahead. Transfer mixture to an airtight container, cover, and chill for up to 2 weeks. Bring to room temperature before serving.
*My onions cooked for about 20 to break down, softened and become a nice shade of golden before I continued on to the next step.

    1. Photoshop can be a royal pain to learn. I have used it for years in graphic design and still don't know the half of it.

    1. I believe home is the only place for a great burger! There is so much more you can do with then then at a restaurant! Try them!
