How to Make Bacon Chicken Bites

Step 1: First things first, preheat your oven to 425 degrees F. And while it's heating up, line a large baking sheet with aluminum foil and pop an oven-safe wire rack right on top.

Step 2: Now, take the chicken breasts and cut them into 1-inch cubes. You'll have about 12 per breast, which adds up to a total of 24 pieces of chicken.

Step 3: Wrap each of those chicken pieces with a slice of bacon and secure it in place with a toothpick. Arrange them on the wire rack, and make sure they're in a single layer.

Step 4: Sprinkle a generous helping of brown sugar all over those bacon-wrapped beauties.

Step 5: Let the bites bake for around 25 to 30 minutes, or until the bacon is perfectly crispy and everything is cooked through and golden brown. 

Step 6: While the bites are baking, grab your slow cooker. Inside, you're going to whisk together the pineapple juice, teriyaki sauce, Worcestershire sauce, rum, ketchup, and just a little pinch of cayenne pepper for some extra kick.

Step 7: Once the bites are out of the oven and nice and crispy, carefully transfer them to your slow cooker and give them a good toss in that mouthwatering sauce.

Ingredients

  • 1 lbs chicken breast - cut into 1" cubes
  • 12 slices of bacon - cut in half
  • 4 tablespoon brown sugar
  • 4 oz pineapple juice
  • 4 tablespoon teriyaki sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dark Rum
  • ½ cup ketchup
  • pinch of cayenne

Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil and place an oven safe wire rack over top.
  • Cut each chicken breast into 1" cubes, about 12 per (24 total). 
  • Wrap each in bacon and insert a toothpick in the center to secure. Arrange on wire rack in a single layer. 
  • Sprinkle brown sugar heavily over the bacon bites. Bake for 25-30 minutes, until bacon is crispy and cooked through.
  • Meanwhile, in your slow cooker, whisk together the pineapple juice, teriyaki sauce, Worcestershire sauce, rum, ketchup, and cayenne.
  • When bites are cooked through, carefully transfer to slow cooker and toss with sauce. Cover and keep on low to heat through.
  • Top with scallions if you're feeling fancy to a hungry crowd.
