Let me start by saying I do have the best job in the world. I sell comic books. Point and laugh all you want, but most people at the end of the day can't say that they love their job. Think what you want about comic book readers, but you're probably wrong. Hold you nose as high in the air as you can at the art form, but it's statistically proven to help people learn to read. Judge me all you want. I'm comfortable in my boots.

I have 400 members and several hundred other weekly customers that I know. I know their dog, their kids, where they go vacationing, what they do and who THEY are. And they know me. And if I had a flat tire, I know I could ask almost all of them for a hand and they would help without question. And I would do the same for them.

I always bring left over goodies to work to give out to my customers. I love feeding people (duh) and I don't want all these goodies in my house (the BF's already blaming me because he had to join a gym). But today was special. Not only did one customer come in and tell me how awesome my last batch of chocolate peanut butter chip muffins was, another actually took the time to call me and tell me how great my cupcake was. This really means a lot to me. Not a text. Not a tweet or a Facebook comment but a real phone call. In today's world, that's awesome. Thank you!

I'll keep feeding you chocolate peanut butter chip muffins if you guys keep buying comics.

Chocolate Peanut Butter Chip Muffins

Ingredients:Chocolate Peanut Butter Chip Muffins Recipe \\ PassTheSushi.com

  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 tablespoons best quality cocoa powder
  • ¾ cup superfine sugar
  • ¾ cup peanut butter chips, plus ¼ cup for sprinkling
  • 1 cup milk
  • â…“ cup plus 2 teaspoons vegetable oil
  • 1 egg
  • 1 teaspoon pure vanilla extract

Preparation:

Special equipment: Muffin tin with paper muffin cases

Preheat the oven to 400 degrees F.

Put the flour, baking powder, baking soda, cocoa, sugar, and ¾ cup of the peanut butter chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining ¼ cup chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

    I adore Reese's Peanut Butter Cups and this happens to be my baking day, so I'll be taking a batch of these out of the oven in a bit. Since I especially like the PB Cups covered in white chocolate, I'm going to drizzle some white chocolate over these muffins!
