What Are Raw Cookie Dough Bites?

Cookie dough bites are edible chocolate chip cookie dough in the form of dough balls. They're the perfect no-bake dessert for those days when you want something sweet but don't want to go through the hassle of baking.

First, we beat the butter and sugar until light and creamy. Then, we add the milk and vanilla. Next comes the flour and folding in the chocolate chips. It's that easy!

What you'll love about this recipe:

  • NO BAKE – no need to heat up your oven with this recipe. These bites are like eating cookies but without the hassle of baking.
  • CHOCOLATE LOVERS – these cookie bites have little chocolate chips, providing a burst of sweet chocolatey goodness in every bite.
  • NO-FUSS – You only need one bowl and 8 ingredients to make this delicious recipe.

What You Need to Make Cookie Dough Bites

  • Unsalted butter – room temperature.
  • Granulated sugar – adds a kick of sweetness.
  • Packed light brown sugar – adds a hint of molasses-y sweetness.
  • Milk – helps bind the ingredients together without using raw eggs.
  • Pure Vanilla Extract – adds a depth of flavor.
  • All-purpose flour – adds structure to the bites.
  • Salt
  • Mini chocolate chips – use whatever kind of chocolate you like, such as semi-sweet chocolate chips, milk chocolate chips, dark chocolate chips, or even white chocolate chips!
  • In the bowl of a stand mixer, combine the butter and sugar until creamy and light, about 3 minutes. With the mixer on low, add the milk and vanilla. Mix until combined.
  • Slowly add in the flour and mix until combined. Scrap down the sides and run the mixer for 30 seconds more. Fold in the chocolate chips.
  • Cover and chill the dough for 30 minutes. Using a 1" scoop, place dough on a cookie sheet lined with parchment paper. Go back over each and roll between your palms to make orbs if you like. If not, the scoop works just fine.
  • Refrigerate 1 hour to set. Serve cold.

Expert Recipe Tips

  • Add a sprinkle of flaky salt on top for a salty finish.
  • If you're worried about consuming raw flour, you can always heat-treat the flour in a microwave-safe bowl for around 90 seconds before adding it to the dough.

How to Store Leftovers

Recipe FAQs

Absolutely. Just double the ingredients.

If you want to make gluten-free bites, swap the all-purpose flour for almond flour or gluten-free flour. In addition, add cashew butter or peanut butter for a fun twist. If you don't want to use chocolate chips, you can chop up a chocolate bar instead.

I loved these so much that I had to make them myself. I adapted the recipe a little but they were sooooo good. Trying to stop myself from eating the whole batch in one go.

I blogged about them here if you'd like to see my attempt! https://www.amuse-your-bouche.blogspot.co.uk/2012/11/no-bake-cookie-dough-bites.html

I only just realised that you only just posted this recipe hahaha, I assumed it must have been an old one when I saw it the other day. I don't usually repost people's recipes two days after they did their original post!!! I guess that's a testament to how GOOD you made them look, that I just couldn't wait 😀
