Christmas came and went and now its time to ring in the new year with snazzy parties and fancy cocktails. I have been invited to a few of such events, but as I am mass amounts of excitement in the real world, I will probably just sit at home enjoying the evening with my own private stash of bubbly. After how much fun I had making Christmas dinner though, the idea of throwing a last minute hurrah at my house had been pinging around in my head. (Says the girl that had no dessert to offer.)

<p>New Year&#8217;s Eve appetizer&#8217;s seem to be on everyone&#8217;s mind when I asked on Twitter what today&#8217;s post should feature &#8211; so here are some uber tasty little treats if you are having yourself a shindig this Saturday night.</p>

<h2>Pimento Cheese Sliders</h2>
<p><em><a href="http://passthesushi.com/wp-content/uploads/2011/12/silrloin_slider_15.jpg"><img class="alignright  wp-image-7437" title="silrloin_slider_15" src="http://passthesushi.com/wp-content/uploads/2011/12/silrloin_slider_15-685x1024.jpg" alt="" width="260" height="389" /></a>From Rachael Ray Magazine (you know Rach, date&#8217;s on your pages would be super helpful)</em></p>
<h3>Ingredients:</h3>
<ul>
<li>16 slices white or wheat bread</li>
<li>1 1/2 lbs ground beef sirloin</li>
<li>2 to 3 garlic cloves, grated or finely chopped</li>
<li>3 to 4 tbs gated onion</li>
<li>1 tbs paprika or sweet smoked paprika</li>
<li>1/2 cup lager beer (I used a bottle of Dogfish head)</li>
<li>Salt and pepper</li>
<li>Olive Oil</li>
<li>2 tbs butter</li>
<li>2 tbs flour</li>
<li>1 cup milk</li>
<li>1 cup shredded sharp yellow cheddar cheese</li>
<li>3 tbs well-drained chopped pimentos</li>
<li>1 tbs yellow mustard</li>
<li>several drops hot sauce</li>
<li>8 slices dill pickle chips</li>
</ul>
<h3>Preparation:</h3>
<p>Heat the oven to 350 degrees F. With a biscuit cutter, cut the bread into 3 inch rounds or trim into slider sized squares. Arrange on a baking sheet and bake until lightly toasted and golden, 8 to 10 minutes.</p>
<p>Combine the meat with the garlic, onion, paprika, beer, salt and pepper. Mix and form 8 burger (about 3 inches each) and drizzle with olive oil. Heat a griddle pan or large cast-iron skillet over medium-high heat. Cook the patties for 3 to 4 minutes on each side.<br />
Meanwhile, in a saucepan, melt the butter over medium heat. Whisk in the flour and milk and simmer to thicken for about 3 minutes; season with salt and pepper. Melt in the cheese and stir in the pimentos, mustard and hot sauce.</p>
<p>Divide the patties among 8 toast slices and top with the cheese sauce and another slice f toast. Garnish with the pickles and secure with toothpicks.</p>

It's hard to find a balance between what to post on Pass the Sushi and what not to. I don't photograph everything I eat (trust me, you would be appalled) but I do try to photograph the good ones. There are a few that have never even made it to a 'photo shoot' because I simply can't be bothered with making them look pretty before devouring them. <p>As for December, there just wasn&#8217;t enough days. I wanted to post more and finally burnt myself out. My guests at Christmas dinner were shocked to find no dessert. That&#8217;s right. Nothing. I simply couldn&#8217;t pull it off. I know next year to post my Thanksgiving recipes in October and my holiday recipes from then on if I want to sneak in everything that I have for you guys without having to post two or three times a day. I&#8217;m sure that would burn even you out!</p>
<p>So, these post Christmas Eggnog pancakes will just have to do, better late than never. Sure, I could have tucked them into a folder for next year but, let&#8217;s be real, I have the memory of a goldfish and they would have been long forgotten. I hope you all have better organizational skills so that you can whip these up for next Christmas, or maybe just splurge of New Years day. <h2>Eggnog Pancakes</h2>

<h3>Ingredients:</h3>
<ul>
<li>2 cups all-purpose flour</li>
<li>4 teas baking powder</li>
<li>1/2 teas salt</li>
<li>1/4 teas ground nutmeg</li>
<li>2 eggs</li>
<li>1 1/2 cups eggnog, plus 2 tbs eggnog</li>
<li>2 tablespoons butter or margarine, melted</li>
<li>1/2 cup syrup</li>
</ul>
<h3>Preparation:</h3>
<div>Preheat a griddle to medium-high heat, or get a skillet start getting warm over medium-high heat.</div>
<div>In a medium bowl, combine the flour, baking powder, salt and nutmeg. Set aside.</div>
<div>In another bowl, beat eggs, 1 1/2 cups eggnog and butter. Fold in the dry ingredients just until moistened and no large lumps remain. Don&#8217;t over-mix the batter.</div>
<div>Place butter on the griddle surface, or spray with cooking spray.</div>
<div>Pour batter by 1/4 cupfuls onto griddle. Turn when bubbles form on top and around the edges and bottom is light golden brown. Flip once and cook until the other side is golden brown, 3-4 minutes.</div>

<div>Whisk syrup and 2 tbs eggnog together and pour over hot pancakes with butter.</div>

<h2>Copy-Cat Panera Broccoli-Cheddar Soup</h2>

<h2>Ingredients</h2>
<ul>
<li>6 tbs unsalted butter</li>
<li>1 small onion, chopped</li>
<li>1/4 cup all-purpose flour</li>
<li>2 cups half-and-half</li>
<li>3 cups low-sodium chicken broth</li>
<li>2 bay leaves</li>
<li>1/4 teaspoon freshly grated nutmeg</li>
<li>Kosher salt and freshly ground pepper</li>
<li>4 cups broccoli florets (about 1 head)</li>
<li>1 large carrot, shredded</li>
<li>2 1/2 cups grated sharp cheddar cheese, plus more for garnish</li>
</ul>
<h2>Directions</h2>

<p>Melt the butter in a large Dutch oven or pot over medium heat. Add the onion and cook until tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.</p>
<p>Add the broccoli and carrot to the broth mixture and simmer until tender, about 20 minutes. Discard the bay leaves. Puree the soup in batches in a blender until smooth; you&#8217;ll still have flecks of carrot and broccoli. Return to the pot. (Or puree the soup in the pot with an immersion blender.)</p>
<p>Add the cheese to the soup and whisk over medium heat until melted. Add up to 3/4 cup water if the soup is too thick. Ladle into the bowls and garnish with cheese.</p>

Holy post holiday madness, Batman. I am so glad I don't work Mondays because I really need today to just recover. For anyone who has to work today, or yesterday, bless you. I hope everyone is prepped and ready for Christmas day and enjoying some quality time today. Or at least you are calming things down and will be able to relax by tonight. I have a bit of festive work, then some holiday party-ness and a long over due Christmas Eve dinner with my family. Then I will tuck myself in tight and await a visit from Santa.

<h3>Ingredients:</h3>
<p><em></em><strong>For the cupcakes:</strong></p>
<ul>
<li>1 1/3 cups all-purpose flour</li>
<li>¼ teas. baking soda</li>
<li>½ teas baking powder</li>
<li>½ teas salt</li>
<li>¼ teas freshly ground nutmeg</li>
<li>¼ cup dark rum or bourbon (optional)</li>
<li>1 cup eggnog</li>
<li>¼ cup vegetable or canola oil</li>
<li>1 tbs apple cider vinegar</li>
<li>1 teas vanilla extract</li>
<li>1 cup sugar</li>
</ul>
<p><strong>For the frosting:</strong></p>
<ul>
<li>2½ sticks unsalted butter, at room temperature</li>
<li>2½ cups confectioners’ sugar</li>
<li>Pinch of salt</li>
<li>Pinch of freshly grated nutmeg</li>
<li>2½ tbs eggnog</li>
<li>1 tbs dark rum (0ptional)</li>
</ul>
<h3><strong>Preparation:</strong></h3>
<p>Preheat the oven to 350˚ F. Line cupcake pans with paper liners.</p>
<p>In a medium bowl, combine the flour, baking soda, baking powder, salt and nutmeg; whisk to combine, set side.</p>
<p>In the bowl of an stand mixer or with a handheld blender, combine the rum, eggnog, vegetable oil, vinegar, and sugar. Beat on medium-low speed until well blended, scraping the sides with a spatula as necessary to incorporate all ingredients. Add in the dry ingredients, in three additions and mix on low speed just until incorporated.</p>
<p>With a large ice cream scoop, divide the batter between the prepared cupcake liners, filling the cups 2/3 full. Bake 22-24 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan 5 minutes, then transfer to a wire rack to cool completely.</p>
<p>Meanwhile, make the frosting. Beat the butter on medium-high speed until smooth, 20-30 seconds. Add in the powdered sugar, salt and nutmeg, and mix on medium-high speed until incorporated and smooth, about 1 minute. Add in the eggnog and whip on medium-high speed until light and fluffy, 4 minutes. With the mixer on medium-low speed, blend in the rum. Remove the frosting from the bowl and put into a piping bag. Place if refrigerator for a few minutes if the frosting has become too soft to pipe.</p>
<p>Frost cupcakes as desired.</p>

<li>1 cup (2 sticks) cold unsalted butter, cut into cubes</li>
<li>1 cup sugar</li>
<li>1 large egg</li>
<li>1 teas vanilla extract</li>
<li>1 teas dark rum</li>
</ul>
<h3>Preparation:</h3>
<p>Preheat oven to 350 F. Line baking sheets with aluminum foil or parchment paper.</p>
<p>Whisk the dry ingredients in a bowl and set aside.</p>
<p>In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar about 3 minutes. Add the egg, vanilla extract and rum and beat until combined. Scrape the sides, if needed, to make sure everything is incorporated.  Mix in the dry ingredients on low. Once the flour mixture is no longer visible within the dough, beat until combined.</p>
<p><strong></strong>Transfer the dough to a clean work surface and divide in half. Knead the dough to gather any crumbs and shape into a ball.  Grab one of your dough balls and roll it out until it is about 1/8-inch thick. Use a dough scraper to make sure the edges come up. Use cookie cutters to cut out shapes, and place the cookies on the prepared baking sheets.  Place cookie sheet in the fridge for 15 minutes before baking. Form the scraps back into a ball and reroll cutting out more shapes until all the dough is used up.</p>
<p>Bake for 10-12 minutes, or until light golden brown and set at the edges. These are a pale cookie, so don&#8217;t wait too long to pull them out. Transfer the baking sheets to wire racks and cool the cookies for a few minutes before removing them to the racks to cool completely.</p>
<p>Decorate with icing if desired.</p>

There is a mountain of presents in the middle of being wrapped, all the grocery shopping is done (I hope), and the stockings are all set to be hung. I'm taking a moment to unwind a minute and watch a little bit of The Santa Claus 3. But if you did want your family to have something more than <em>pure</em> sugar for Christmas breakfast, these delicious cinnamon rolls come together quick enough that you could sneak off while someone struggles to unhinge that must have toy from its stressful packaging.</p>

<h2>Easy Maple Pecan Cinnamon Rolls</h2>

<h3><strong>Ingredients:</strong></h3>
<p><strong>For the Filling:</strong></p>
<ul>
<li>3/4 cup brown sugar, packed</li>
<li>1/4 cup sugar</li>
<li>3/4 cup chopped pecans</li>
<li>2 teas cinnamon</li>
<li>1/8 teas salt</li>
<li>1 tbs unsalted butter, melted</li>
</ul>
<p><strong>For the Dough</strong>:</p>
<ul>
<li>3 cups all-purpose flour</li>
<li>3 tbs sugar</li>
<li>1 teas baking powder</li>
<li>1/2 teas baking soda</li>
<li>1/2 teas salt</li>
<li>1 cup buttermilk</li>
<li>6 tbs unsalted butter, melted, divided</li>
<li>1/3 cup maple syrup</li>
</ul>
<p><strong>For the Icing:</strong></p>
<ul>
<li>2 tbs unsalted butter, softened</li>
<li>3 tbs maple syrup</li>
<li>1 to 2 teas milk</li>
<li>1 cup confectioners’ sugar</li>
</ul>
<h3>Preparation:</h3>
<p>Coming all of the filling ingredients in a bowl and mix with a fork. Set aside.</p>
<p>Preheat the oven to 425 degrees F.</p>
<p>In the bowl of your stand mixer, with dough hook attachment combine the flour, sugar, baking powder, baking soda, and salt. Add the buttermilk, syrup, and 2 tablespoons of the melted butter; mix until combined. Scrape sides with a spatula to make sure all ingredients were incorporated. Let mixer run for 3 to 5 minutes to knead the dough. Remove from mixer, cover and chill in refrigerator for 20 minutes.</p>
<p>Remove the dough from the fridge and on a clean work surface roll or press dough into a 12 x 8 rectangle. Pour 2 tablespoons of the melted butter on and spread around with your fingers. Pour the filling that you set aside earlier over the dough and spread it evenly over the top, leaving about a 1/2 inch or so border around the outside edge. Press the filling down to pack it on top of the dough. It&#8217;s going to get gooey, make sure your sleeves are rolled up.</p>
<p>Starting on the long side of the dough, roll the side up, pressing as you go, to create a tightly rolled log. Pinch the seam closed and lay the log seam side down.Yes, you will have some mess on the counter, no biggie.</p>
<p>Brush a 9 inch cake pan or an iron skillet with 2tablespoons melted butter. Cut into 8 even pieces (1 1/2 inches), and transfer each roll to the prepared cake pan. Brush with the remaining 2 tablespoons of melted butter. Bake for 20 to 23 minutes, until golden brown.</p>
<p>Meanwhile, make the icing. In the bowl of a stand mixer, cream the butter and add the sugar. Add the syrup and mix well, until the mixture is smooth. If it is too thick, add a teaspoon or so of milk to loosen it up to desired texture.</p>
<p>Let the cinnamon rolls cool for at least 5 minutes before topping with icing and serving.</p>

Christmas wouldn't be the same (in this modern world of ours) without Christmas specials. I love finding the same classic movies on over and over again from Thanksgiving on. <p>So what do Christmas specials have to do with food? Not a whole lot. But, these Cornish hens reminded me of the humble dinner that Bob Cratchit served his family for Christmas. (Another Christmas classic my dad would always watch late at night after everyone was in bed and he stayed up making sure all the presents looked just so).</p>
<p>Game hens are the perfect portion for a small family/friends get together for the holidays and faster cooking than a turkey. The pomegranate-rice stuffing is an interesting take on traditional stuffing and really dressing thins up a bit.</p>

<h2>Glazed Cornish Hens with Pomegranate-Rice Stuffing</h2>
<p><em><a href="http://passthesushi.com/wp-content/uploads/2011/12/cornish_game_hen_16.jpg"><img class="alignright  wp-image-7276" title="cornish_game_hen_16" src="http://passthesushi.com/wp-content/uploads/2011/12/cornish_game_hen_16-685x1024.jpg" alt="" width="260" height="389" /></a>From Food Network Magazine</em></p>
<h3>Ingredients:</h3>
<ul>
<li>3/4 teas ground cinnamon</li>
<li>Kosher salt and freshly ground pepper</li>
<li>4 Cornish hens (about 1 1/4 pounds each), rinsed and dried</li>
<li>3 cups low-sodium chicken broth</li>
<li>1 1/2 cups wild rice blend (I used a box of Uncle Bill&#8217;s Wild Rice blend without the seasoning package).</li>
<li>6 tbs unsalted butter</li>
<li>1 large shallot, minced</li>
<li>1 clove garlic, minced</li>
<li>3/4 teas ground ginger</li>
<li>3/4 teas ground cumin</li>
<li>3/4 cup pomegranate seeds, plus more for serving*</li>
<li>2 tbs chopped fresh parsley, plus sprigs for serving</li>
<li>2 tbs chopped fresh cilantro, plus sprigs for serving</li>
<li>3 large egg yolks</li>
<li>3/4 cup fresh orange juice</li>
<li>1 tablespoon <a href="http://www.foodnetwork.com/recipes/alton-brown/pomegranate-syrup-or-molasses-recipe/index.html" target="_blank">pomegranate molasses</a></li>
</ul>
<h3>Preparation:</h3>
<div>
<p>Mix the cinnamon, 4 teaspoons salt and 1/2 teaspoon pepper in a bowl; sprinkle all over the hens and inside the cavities. Place the hens on a rack set on a rimmed baking sheet and refrigerate, uncovered, at least 2 hours or overnight.</p>
<p>Bring the chicken broth and 2 cups water to a boil in a saucepan; add the rice blend and cook as the label directs. Drain and rinse under cold water.</p>
<p>Preheat the oven to 400 degrees F. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the shallot, garlic, ginger and cumin and cook, stirring, until soft, about 3 minutes. Remove from the heat; add the cooked rice, pomegranate seeds, and chopped parsley and cilantro; toss to coat. Season with salt and pepper. Add the egg yolks and stir to combine.</p>
<p>Make the glaze: Bring the orange juice and pomegranate molasses to a boil in a small skillet over medium heat. Cook until reduced by half, about 5 minutes. Remove from the heat and swirl in the remaining 2 tablespoons butter.</p>
<p>Fill the cavity of each hen with about 1/2 cup of the rice mixture (reserve the rest); tie the legs together with twine. Roast 20 minutes, then brush with the pomegranate glaze. Continue roasting, glazing every 10 minutes, until a thermometer inserted into the thigh registers 165 degrees F to 170 degrees F, 1 hour to 1 hour, 10 minutes. (Rotate the hens halfway through cooking; if the skin gets too dark, cover loosely with foil.)</p>
<p>Spoon the reserved rice into a pie dish, sprinkle with water and cover with foil. After the hens have roasted about 20 minutes, transfer the rice to the oven and cook until heated through, about 45 minutes.<em> Keep an eye it because it goes for browning to dark brown in a matter of moments as evident by my pics.</em></p>
<p>Transfer the hens to a platter and add some parsley and cilantro sprigs and pomegranate seeds.</p>
<p>*I got enough seeds from one pomegranate to use for the rice and to serve. To remove the seeds, cut the pomegranate in half over a paper towel and in a bowl of cool water, rub your thumbs over the seeds to extract them, as seen in <a href="http://video.about.com/gourmetfood/Pomegranate.htm" target="_blank">this video</a>.</p>

Christmas wouldn't be the same (in this modern world of ours) without Christmas specials. I love finding the same classic movies on over and over again from Thanksgiving on. Nothing quite makes you smile like the distant hum of all the Whos down in Whoville or when Linus gives his Christmas monologue. That is the meaning of Christmas, Charlie Brown.

So what do Christmas specials have to do with food? Not a whole lot. I realize this is probably uncommon in an adult, but as I passed an elderly woman the other night in the market who was humming Christmas carols out loud to herself, I couldn't help but smile and believe in Christmas magic. I realize this is probably uncommon in an adult, but as I passed an elderly woman the other night in the market who was humming Christmas carols out loud to herself, I couldn&#8217;t help but smile and believe in Christmas magic. Maybe it&#8217;s naive to believe that the month of December brings out the best in people, maybe it&#8217;s crazy to think that the holidays bring out a sparkle that is hidden the rest of the year are maybe it&#8217;s sad because we should have it all year long, but the moment that turkey was carved on Thanksgiving I could smell in the air.</p>
<p>It&#8217;s the way you can tell it&#8217;s going to snow day or two before and how the child inside you can&#8217;t help but remember the anticipation</p>

<p>of schools closing the adventures you are have as a white flurry filled the air. There&#8217;s just something</p>
<p>&nbsp;</p>
<p>magical about it. It&#8217;s not the presents you’re going to wake up to, it&#8217;s the hunt for the surprises for everyone else. It&#8217;s bringing out the stockings embroidered with names long ago. It&#8217;s the memories that each and every ornament hung on the tree symbolizes the moment shared with loved ones in the past and more to come in the future.</p>
<p>I often don&#8217;t like to decorate to soon in fear I may burn myself out or somehow spoil the Christmas magic and then I remember there&#8217;s only one month between Thanksgiving and the new year to enjoy the festivities. (*See my petition earlier this week to move the holiday&#8217;s back a month).  So it may sound crazy but next year I think I&#8217;m in bust out the holiday decorations on Black Friday and get the most out of this season as I can, because I believe in Christmas magic and it&#8217;s not just one month long.</p>

<h2><strong>Peanut Butter Brownies<br />
</strong></h2>

<h3>Ingredients:</h3>
<p><strong>For the brownies:</strong></p>
<ul>
<li>1¼ cups flour</li>
<li>1 teas salt</li>
<li>2 tbs cocoa powder</li>
<li>11 oz dark chocolate, coarsely chopped</li>
<li>1 cup unsalted butter, cut into 1-inch pieces</li>
<li>1 teas instant espresso powder</li>
<li>1½ cups granulated sugar</li>
<li>½ cup packed light brown sugar</li>
<li>5 eggs, at room temperature</li>
<li>2 teas vanilla extract</li>
</ul>
<p><strong>For the peanut butter:</strong></p>
<ul>
<li>½ cup unsalted butter, melted</li>
<li>1 cup powdered sugar</li>
<li>1½ cups creamy peanut butter</li>
<li>½ teas salt</li>
<li>1 teas vanilla extract</li>
</ul>
<p>&nbsp;</p>
<h3>Preparation:</h3>
<p>Preheat the oven to 350 degrees F. Grease a 9&#215;13 baking dish.</p>
<p>Whisk together the flour, salt, and cocoa powder; set aside.</p>
<p>Put the chocolate, butter and espresso powder in a microwave safe bowl and microwave in 20 second intervals, until the chocolate is melted, stir to combine. Add the sugar and whisk until combine. Let the mixture rest until room temperature.</p>
<p>Once the chocolate has cooled, add the eggs and the vanilla and whisk until combined.</p>
<p>Sprinkle the flour mixture over the chocolate mixture and fold to incorperate using a rubber spatula until the flour is no longer visable.</p>
<p>Pour the batter into the prepared pan.</p>
<p>Combine peanut butter swirl ingredients. Using a spoon, place dollops onto the prepared brownie batter and swirl with a butter knife or wooden skewer.</p>
<p>Bake in the center of the oven for 30 minutes,  until a toothpick inserted into the center of the brownies comes out with a few crumbs hanging on. Don&#8217;t over bake &#8211; everyone loves a gooey brownie <img src='http://passthesushi.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

So, in order to curb my inner fat kid&#8217;s craving for a carbohydrate feast I set out to make my own Olive Garden specialty.</p>
<p>This is artichoke dip would make a perfect appetizer for your holiday meal, something you could throw down right before Thanksgiving, Christmas, or as I did with it the moment I was done snapping these pictures is using it for a great topping for pizza.</p>
<p>So as far as the classic Italian fare Olive Garden goes, I can wait until the local excitement dies down, the line gets a little shorter, and I run out of recipes in my reader before I go over and indulged. In the meantime enjoy this dip in less time than it would take to get a table.</p>

<h2>Spinach and Artichoke Dip &#8211; Olive Garden Copy Cat Recipe</h2>

<h3>Ingredients:</h3>
<ul>
<li>1 8-oz block cream cheese, room temperature</li>
<li>1/4 cup mayonnaise</li>
<li>1/4 cup Parmesan cheese</li>
<li>1/4 cup Romano cheese</li>
<li>1 clove garlic,  finely minced</li>
<li>1/2 teas dried basil, 1 tablespoon fresh basil</li>
<li>1/4 teas garlic salt</li>
<li>1 14-oz can artichoke hearts, drained, coarsely chopped</li>
<li>1/2 cup frozen chopped spinach, thawed and well drained</li>
<li>salt and pepper, to taste</li>
<li>1/4 cup mozzarella cheese, grated</li>
</ul>
<h3>Preparation:</h3>
<p>Preheat oven to 350 degrees F. Spray a pie plate, or small casserole dish with cooking spray.</p>
<p>In the bowl of a stand mixer, beat the cream cheese until creamy, 3-5 minutes. Add the mayonnaise, Parmesan, Romano cheese, garlic, basil, and garlic salt and mix until fully incorporated.</p>
<p>Remove the bowl from the stand mixer and fold in the artichoke hearts and spinach. Season with salt and pepper to taste. Pour into prepared baking dish and top with mozzarella cheese.</p>
<p>Bake for 25 minutes, until the top is browned and bubbling. Serve with chips or toasted bread.</p>

I remember mini cheesecakes from when I was little. They were a quick and easy dessert that could be topped with canned pie filling and made to order for a large amount of people with short notice.
Some things never change, and having a quick delicious dessert recipe on hand is always helpful in a pinch. When Lucky Leaf asked me to taste test some of their pie fillings, I knew I wanted to reconstruct my childhood memory into a recipe my readers could whip out when needed.

<p>That&#8217;s where things started to go wrong. I wanted quick and easy. So while meandering around the market for supplies, I saw Philadelphia Cheesecake Filling. (Don&#8217;t judge. My thinking was that if I were in a pinch and were going to use canned pie fillings, why wouldn&#8217;t I also use other delicious shortcuts?) I picked it up, foil (yes, these are important) cupcake liners, and my vanilla wafers and set out to have dessert done in five minutes.</p>
<p>Not so much. The prepackaged cheesecake mix was a &#8216;spoon and serve&#8217; disaster. It didn&#8217;t look right, had a texture somewhere between pudding a mousse and wasn&#8217;t making for a pretty or homemade looking dessert. So&#8230;. I tried baking it&#8230;. Well, my advice is if you are in need of a fat kid moment, keep it at that. Grab a spoon and enjoy the cheesecake mix as is because that&#8217;s as good as it&#8217;s getting with this one.</p>

<p>Then, I thought about those Jell-O No Bake Cheesecakes. But I was in a particularly cheap mood and the $2.35 just wasn&#8217;t jiving with me when I had 8 blocks of cream cheese at home in the fridge. It was on sale, I swear.</p>
<p>So here&#8217;s what I ended up with. A semi-homemade, super simple, but not the 5 minute flash kind of dessert that still looks classy when brought to the party.</p>

<h2>Mini Apple Cheesecakes</h2>

<h3>Ingredients:</h3>
<ul>
<li>1/4 box (about 14) Vanilla wafer cookies</li>
<li>3 tbs butter, melted</li>
<li>11 oz cream cheese, softened</li>
<li>1/2 cup sugar</li>
<li>2 eggs</li>
<li>1 tsp vanilla extract</li>
<li>1/2 can Lucky Leaf Apple Pie Filling/Topper</li>
<li>Walnuts and Whipped cream for topping</li>
</ul>
<h3>Preparation:</h3>
<p>Preheat oven to 350 degrees F. Line a muffin tin with 10 foil liners.</p>
<p>In a food processor or with a little aggression, ziplock and rolling pin, crumb the vanilla wafers. In a small bowl, toss the cookie crumbs with the melted butter. Place about 1 teas, or enough to cover, cookie mixture in each of the lined tins. Use the bottom of a flat shot glass or your fingers to press the crumbs firmly into each tin. Bake for 10 minutes. Let cool.</p>
<p>Reduce oven to 325 degrees F.</p>
<p>In the bowl of a stand mixer, cream the cream cheese and sugar together until smooth, about 3 to 5 minutes. Add the eggs, one at a time and stop to scrape down the sides after each. Make sure your cream cheese mixture is smooth.</p>
<p>Using an ice cream scoop, divide the batter evenly in the cooled muffin tins.  Bake for 20 minutes, until the mixture is set, but jiggles slightly. Turn off oven, but leave the cheesecakes inside with the door cracked for 30 minutes more.</p>
<p>Remove from oven and refrigerate at least 5 hours before serving.</p>
<p>Before serving, place 2 to 3 apple slices over each cheesecake with a dollop of whipped cream and some walnuts on top.</p>

<p>The apples from the jarred pie filling were good. Win. If you were an apple fan and in a sweets mood, you could eat these right out of the can. The texture of the apples was nice, and not at all &#8216;mushy&#8217; like I had anticipated. I love how they streamlined this dessert and really dressed up the whole package.</p>
