Apple Pie Waffles

Ingredients

For the Waffles

  • 1 cup flour
  • ¼ teaspoon salt
  • 2 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon ginger
  • 2 eggs
  • 2 teaspoon maple syrup
  • 3 tbs butter - melted and cooled
  • 1 cup buttermilk
  • cup apple cider
  • ¼ cup pecans - toasted and chopped fine

For the Apple Cider Topping

  • 1 tart granny smith apple - cored and sliced thin
  • 1 tbs butter
  • 2 tbs honey

Instructions

Make the Waffles

  • Preheat your oven to 200 degrees F. Line a baking sheet with a wire rack; Set aside. Preheat your waffle iron.
  • Toss the flour, salt, baking powder, soda, cinnamon, nutmeg, and ginger together in a large bowl. 
  • Whisk the eggs and maple syrup together in a small bowl. 
  • Whisk the buttermilk and apple cider in another small bowl.
  • Make a well in the center of the flour mixture and pour in the egg mixture, butter, and buttermilk mixture. Stir until just combined. 
  • Fold in the pecans. (batter may have a few lumps, totally ok).
  • Cook until golden and crisp as per your waffle irons instructions. Keep warm on wire rack in the preheated oven if needed.

Meanwhile, make the apple topping.

  • Melt the remaining 1 tbs butter in a pan over medium heat. Add the sliced apples and cook until soft, about 5 minutes. 
  • Drizzle in honey and cook 2 minutes longer. Remove from heat.
  • Serve the waffles with apple slices spooned over top and additional toasted pecans if desired.
