On Friday it was cool, overcast and on and off again with light rain. It was the perfect kind of weather. I love days that make you want to curl up with a blanket and book; days when its OK to get nothing done. Usually, for some weird reason, on these days, I get inspired and get a ton done!
Last Friday I started the day by making chili. I have made this chili in the past and everyone loves it. The base recipe is taken from Southern Living Slow-Cooker Cookbook and tweaked. It makes a lot of food! I always end up freezing at least half and putting the rest in small containers and handing it out to friends.
Slow-Cooker Chili
2 lbs ground chuck
2 lbs spicy hot sausage ground (I love Bob Evan’s Hot Sausage)
4 8 ounce cans tomato sauce
1 6 ounce can tomato paste
2 onions chopped
1 green pepper chopped
2 16 ounce cans kidney beans drained and rinced
1 1/2 cup frozen corn
1 tablespoon sugar
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1 tablespoon cumin
2 bay leaves
1 teaspoon salt
1 teaspoon black pepper
1/4 cup chili pepper
Brown all of your ground beef and drain, same with your sausage. Put it in the crock-pot with everything else and let sit for 8 hours on low. I usually taste throughout the day to see what more is needed, most of the time I throw in more cumin. XD I love that stuff! This last time I ended up needing an extra can of tomato sauce for some reason.
